Vegan Chocolate & Peanut Butter Cups

Who doesn’t love Chocolate & Peanut Butter Cups?!?

Did you know that they are very easy to prepare and you just need a few ingredients?

As you can guess the main ingredients are chocolate and peanut butter so make sure to use best quality you can find!

Apart from these ingredients, you would also need muffin cups. If you don’t have muffin cups yet I would highly recommend the silicone cups as they are much easier to use. It’s easier to remove the chocolate cups from these rather than the classic metal muffin tray. (Here are the silicone cups that I used: muffin cups).

Ingredients (8 - 10 cups)

 200 g dark chocolate
 1.50 tbsp coconut oil
 peanut butter
 1 tbsp maple syrup (or sugar)
 chopped hazelnuts

 
Instructions

Melt the chocolate with the coconut oil either in a small saucepan or in the microwave.

Add the maple syrup (or sugar) until it's sweet enough. The amount of sweetener depends on the bitterness of the chocolate and your own taste. I love bitter chocolate, but you could prefer sweet chocolate or milk chocolate, so use the chocolate and the amount of sugar you like more.

Pour 1/2 of the melted chocolate in muffin cups, add some chopped hazelnuts and put them in the freezer for 5-10 minutes.

In the meantime, in a bowl mix the peanut butter with some maple syrup.

Take the cups from the freezer, add a spoon of peanut butter to each one. Cover with the remaining chocolate, sprinkle with chopped hazelnuts and put them back in the freezer.

Leave them in the freezer for about an hour, until firm and then serve!
