Chocolate Fudge Brownies

Ingredients (20 pieces)

 300 g Dark chocolate (70-72% cocoa solids)
 220 g Sugar
 175 g Butter*
 175 g Plain flour
 3 Eggs

 *Use margarine or coconut oil for a dairy-free option

 

Instructions

Preheat the oven to 180°C, grease a 20x30cm baking tray or cover with baking paper.

In a bowl mix the eggs with the sugar and whisk (ideally with an electric whisk) then set aside.

Put the butter in a pan and melt it at medium heat being careful not to let it boil.

Turn off the heat and add 230 g chocolate chopped in small pieces. Stir until melted.

Chop the remaining 70 g chocolate in smaller pieces (coffee bean size)

Whisk the eggs a little more until they start get paler, then add the chocolate mix and whisk until smooth.

Gradually add the flour and finally the chocolate chips.

Mix everything until completely combined and then pour the mixture into the baking tray.

Bake for 20-25 minutes. Once they are cooked remove them from the oven and leave to cool down before cutting them and serving.
